Getting out of the same-old-breakfast rut is a big win for me, especially if I can start my day with something easy to do and delicious that will give me the energy to go all the way to lunchtime without having an energy crash. I can’t claim to have tried all of these recipes (yet), but I can say that the three I HAVE tried are now breakfasts I consider both sustaining and delicious. Plus, they’re not that hard to do. I am now a fan of the Moroccan sausage and egg breakfast, the overnight oats with berries and almonds, and the sweet potato with nut butter and banana. The last one is right up there with banana splits as a treat, and the nut butter really makes it a sustainer. I look forward to trying the other recipes. I like food to be delicious, not just ‘healthy’. There’s nothing penitential about these super healthy meals – in fact they feel to me like treats. And the three I have tried are very easy to prepare – especially when you take advantage of the bonus information about keeping great ingredients in the fridge, ready to go (like baked sweet potatoes).
