If you’re not eating delicata squash, you’re totally missing out on this little gem of a vegetable.
Because it doesn’t need to be peeled (so long, cumbersome butternut!) prep time is crazy fast.
After roasting or air frying, delicata turns out creamy, sweet and seriously delicious.
Topped with this tangy and quick coconut avocado blender dressing, this recipe makes a delightful companion dish to any old protein (eggs, quinoa, chicken or pulled pork!) and is amazing leftover, eaten cold and straight from the fridge.
Gluten-free, grain-free dairy-free, vegan, and delicious!

Roasted Delicata Squash with Lime Dressing

Ingredients
  • 1 Delicata Squash
  • 3 tbsps Extra Virgin Olive Oil (divided)
  • 1½ tsps Cinnamon
  • 1½ tsps Turmeric
  • 1 tsp Sea Salt (divided)
  • ½ Avocado (sliced)
  • 1 tsp Ground Ginger
  • 2 tbsps Lime Juice
  • ¼ cup Cilantro (finely chopped)
  • ½ cup Organic Coconut Milk (full fat, from the can)
Instructions
  1. Preheat the oven to 400ºF (204ºC) and line a baking sheet with parchment paper.
  2. Slice the delicata squash lengthwise and use a spoon to scrape out the seeds from each half. Slice into half moons about half inch thick and toss in a bowl with half of the olive oil.
  3. Add in the cinnamon, turmeric and half of the sea salt. Toss together until evenly combined.
  4. Add the spiced delicata squash slices to the baking sheet and bake for 15-18 minutes, until browning. You may flip halfway through if you want an even texture on both sides, but it's not necessary.
  5. While the squash cooks, prepare the dressing by adding the remaining olive oil, remaining sea salt, avocado, ginger, lime juice, cilantro and coconut milk to a blender. Blend together until smooth.
  6. Remove the squash from the oven to let cool. Top with the lime dressing, and additional cilantro. Enjoy!
Notes
No Coconut Milk Use almond milk instead.

Peel? Nope. Delicata squash does not need to be peeled, the skins are edible (and yummy!) once cooked. Just rinse well before cutting open.

Air Fryer: Instead of baking, put the delicata squash slices in the air fryer for 10-12 minutes at 375, check halfway through.

Snacks: Cooked delicata squash pieces are awesome eaten leftover, cold from the fridge (and dragged through some hummus!)
