This method is short and sweet and will make you want to throw all the herbs in a blender.

Gluten-free, dairy-free, grain-free, vegan, and delicious!

Cilantro Chimichurri

Ingredients
  • 4 cups Cilantro
  • 2 Garlic Cloves
  • ½ cup Extra Virgin Olive Oil
  • 3 tbsps Apple Cider Vinegar
  • 1 tsp Sea Salt
  • ½ tsp Red Pepper Flakes (optional)
Instructions
  1. Add all ingredients to blender or food processor and blend/pulse until well combined. Flavors get better as it sits!
Notes
Traditional: Use fresh parsley instead of cilantro and add 2 tablespoons of oregano to the mixture.

Storage: Keeps well in the refrigerator for weeks! In Argentina, it is left out at room temperature for days at a time, and the flavors really deepen.
